Strawberry Julius



Strawberry Julius
Yields (2) 6 oz glasses

Tools Required:
Colander
Blender (or Food Processor)

Ingredients:
1 C Fresh Strawberries, washed and topped
½ C Milk
½ C Ice
¼ Cup Sugar
½ tsp Vanilla or Almond Extract

Directions:
Step 1        Rinse Strawberries and remove green tops
Step 2        Add all ingredients to a blender or food processor. Blend until smooth.  Serve immediately.

Chef's Notes: 
If your blender isn’t able to crush ice, omit the ice and add cold water instead. 

This recipe can be used with other fruits like oranges, blueberries, raspberries and blackberries without any adjustments required. 



Orange Blossom Yogurt Parfaits with Fresh Berries

Yields 6 parfaits
Tools Required
Colander
Mixing Bowl
Whisk
Clear Parfaits Cups
Ingredients
3 cups Fresh Fruit or Berries, rinsed (Slice, if required)
32 oz Greek Yogurt
1/3 C Orange Blossom Honey
1/3 C Fresh Orange Juice
Zest from 1 Orange
½ cup Fresh Granola

Directions
Step 1  Rinse fruit in colander and let drain.  Dab fruit dry with paper towel.  Slice fruit, if required.
Step 2  In mixing bowl, whisk  together Yogurt, Honey, Orange Juice and Zest.
Step 2  In clear serving cups, add horizontal layers of fruit and yogurt.  Top with fresh granola and serve.

Mini Cheese Frittatas


Mini Cheese Frittata


Yields 16 mini Frittata

Tools Required:
Mini Muffin Pan
Measuring Spoons
Whisk
Bowl

Ingredients:
4 Eggs
½ tsp White Pepper, ground
½ tsp Salt
4 TB Milk
2 TB Parmesan Cheese, grated or shredded
1 C Cheddar Cheese, shredded
Cooking Spray



Directions:

Step 1     Preheat oven to 375 degrees

Step 2      In mixing bowl, whisk together Eggs, Pepper, Salt, Milk and Parmesan Cheese.

Step 3     Spray muffin tin generously with cooking spray

Step 4     Place ½ TB of Cheddar Cheese in each mini muffin form

Step 5     Pour egg mixture over cheese in each mini muffin form, filling each one about 2/3 full.

Step 6     Bake for 12-15 minutes or until tops are slightly browned
